Donald Morrissy's new seafood restaurant Oysters is doing a roaring trade on Lapp's Quay. Having remodeled the premises vacated by Augustine’s earlier this year, the former Deputy General Manager of the Clarion Hotel's decision to create a menu that is 80% fresh seafood, 20% meat, poultry and other items is already paying off.
"What I really pride myself on is using entirely local suppliers." Morrissy told Menu, "In the English Market, I use O’Connell’s and Ballycotton Seafood, as well as On The Pig’s Back and O’Mahony’s Butchers. My main seafood supplier is Seafood Cuisine in Skibbereen, an independent operation with three trawlers, with the fish caught in the morning delivered to my kitchen by lunchtime; keeping it local and fresh.”
